A drink that suits the morning in Tokachi. Tokachi Plain Distillery “AKATOKI Origin” — Debuting on 10/10

Since establishing its distillery in Tokachi Hills, Makubetsu, Tokachi Plain Distillery has delivered “fragrant letters” with every season. Now, it has finally launched its first regular craft gin, “AKATOKI Origin” (from October 10). With soft floral notes of lavender and chamomile accented by the brisk citrus of bergamot, the first sip evokes the feeling of Tokachi’s morning dew — fresh and pure. Price: 500ml for 4,950 yen. Available at local liquor shops, souvenir stores, and the official online shop.

[Release Commemoration] Gin Production Method Seminar

The First “Regular” Product from Tokachi Hills

Founded in 2023, Tokachi Plain Distillery has previously released limited editions such as “AKATOKI Limited Edition,” “AKATOKI Raspberry,” and “AKATOKI Tanzanite.” Their commitment to using local botanicals, including Tokachi-grown adzuki beans, has drawn attention. And now, they’ve added their first year-round “standard” gin — created with the desire to offer “a scent you can always return to.”

Transparency Expressed Through 27 Botanicals

Layered like a fragrance tapestry, 27 botanicals are used, including adzuki beans, mushrooms, raspberries from Obihiro’s Tokiiro Farm, and cilantro from Shihoro’s Muso Farm. The elegant bitterness of bergamot runs through floral notes of lavender and chamomile, while the subtle sweetness of adzuki leaves a calm, lingering finish — embodying the refined “clarity of air” unique to Tokachi.

Start with “Straight + a Drop of Water”

For your first glass, try it neat. Add just a drop of water, and the nuances of herbs and flowers will gently bloom. Next, enjoy a 1:3 gin and tonic — the effervescence beautifully carries the citrus edges and floral contours. Lime pairs better than lemon, and a sprig of thyme makes a perfect garnish.

Pairing with Tokachi Cuisine

  • Herb-roasted Nakasatsunai Country Chicken: The crisp skin and herbs harmonize with the gin’s botanical layers.
  • Raclette or Tokachi Cheese Platter: The gentle sweetness of the milk enhances the clean character of the base spirit.
  • Marinated Salmon with Citrus: The subtle bitterness of bergamot refreshes the richness of the fish.

Two Recipes (Wrap Yourself in the “Wind of Tokachi” at Home)

  • AKATOKI G&T
30ml AKATOKI Origin / 90ml plain tonic / 1/8 lime wedge / ice. Stir gently once.
  • Field Martini (Soft Dry)
45ml AKATOKI Origin / 15ml dry vermouth / 1 dash orange bitters. Chill by mixing, and garnish with a thin slice of cucumber for aroma.

Where to Buy

Price: 4,950 yen for 500ml. Available at liquor and souvenir stores throughout Tokachi, as well as the distillery’s online shop. Announcements about limited edition re-productions will be posted periodically — so keep an eye out.

Raise a Glass to the Maker’s Passion

After refining “their own aroma” through several limited editions, the distillers have finally arrived at this expression — a bottle that quietly accompanies daily life yet evokes a small sense of adventure each time it’s opened. On your next weekend, why not take a deep breath with a glass that feels like Tokachi’s morning air?
